Greek Lamb Burgers with Tzatziki Sauce

INGREDIENTS
Sauce
- 1 C plain Greek yogurt
- ½ C grated English cucumber
- 1 tsp garlic
- 2 Tbsp olive oil
- 1 Tbsp dill, chopped
- ½ lemon, juiced and zested
- 2 oz feta cheese
- ½ tsp kosher salt
Burger
- 1 lb Ground Lamb
- ½ Red onion, finely chopped or grated
- 1 tsp mint, chopped
- 1 tsp dill, chopped
- ½ tsp red pepper flakes
- 1 tsp garlic, minced
Toppings
- Arugula
- Roasted Red Peppers
- Feta
- Tomato slices
- Red Onions
- Brioche bun or pita
INSTRUCTIONS
- Prepare sauce. Squeeze grated cucumber with your hands through a cheesecloth to remove excess liquid. In a bowl, mix the cucumber and the rest of the ingredients together until smooth.
- Make the burgers. Add all burger ingredients together in a bowl and mix with your hands until just combined. Form into about 3 to 4 patties.
- Heat grill to medium-high heat (or for the stovetop, heat cast iron skillet to medium-high heat with 2 tablespoons of olive oil). Season burgers with salt and pepper. Grill or sear until browned, about 4 minutes per side for medium-rare.
- Prepare burgers on toasted/grilled brioche bun or in a pita with toppings of your choice and a spread of tzatziki sauce.
