Roger Gerber of Blackwing Meats always had an interest in healthy and delicious protein options. He started the business in 1996 raising ostriches, a surprisingly nutritious red meat, before expanding to offer bison a few years later.
Recognizing the strong demand for delicious, healthy alternatives, Blackwing now works with various independent farms throughout the country. Blackwing has grown to become a leading provider and trusted source of game meat, including rich and robust Wild Boar, and tender, mellow pasture-raised Elk and Venison.
Rich & Robust Wild Boar
Wild Boar has a rich, nutty, and full-bodied flavor profile with a unique juicy succulence that sets it apart from everyday domesticated pork. First introduced in the 1500s by early Spanish explorers, Wild Boar has become an invasive species in the South, wreaking havoc on farms, crops, livestock, and the environment.
Blackwing partners with local companies to professionally trap these destructive animals, removing a major competitive pressure on the land and helping to control the population. After trapping, these hogs are fed a natural diet of roots, acorns, and vegetation, mirroring their wild diet, to ensure a consistently rich and robust taste without any gaminess.
North American Elk and Venison
Raised on lush, natural pastures, our 100% grass-fed North American Venison and Elk are a fantastic heart-healthy protein source with a mellow, clean flavor. No antibiotics or hormones are administered, and both Elk and Venison develop at their own pace. Venison is often compared to beef but is smoother and firmer, with a mild taste.
Elk has a similar flavor profile with a hint of sweetness and a coarser grain—a favorite among hunters. Both are incredibly lean, cook quickly due to their lower fat content, and are full of rich nutrients and vitamins to support a healthy diet.
