Turkey Noodle Soup

Need an easy way to use up leftover Thanksgiving turkey? Throw it in homemade soup for a quick and easy meal to enjoy right away or save for extra leftovers! This recipe is hearty, comforting and filled with fresh herbs that taste like Thanksgiving all over again.

Turkey Noodle Soup

Ingredients

  • 2 tbsp olive oil
  • 1 cup carrots, peeled and chopped
  • 1 cup celery, sliced thin
  • 1 medium yellow onion, diced
  • 2 garlic cloves, minced
  • 8 cups chicken or turkey broth
  • 2 tsp sage leaves, finely chopped
  • 2 tsp fresh rosemary, finely chopped
  • 1/2 tsp dried oregano
  • 12 oz. (1 package) wide egg noodles (or your favorite noodles or pasta)
  • 1-2 cups water
  • 2-3 cups cooked turkey, shredded
  • Salt and pepper to taste.

Instructions

  1. Warm oil in a large dutch oven and add carrots, celery, onion and saute over medium-high heat until vegetables soften, about 7 minutes.
  2. Add garlic and saute for 1-2 more minutes.
  3. Add broth, sage, rosemary, thyme, oregano and pepper then bring to a boil. Let boil until vegetables are fork-tender, about 5 minutes.
  4. Add your noodles of choice and check liquid level. If you need more liquid, at 1-2 cups of water and boil until noodles are soft and fully cooked, about 8-10 minutes.
  5. Add 2-3 cups of turkey and boil until turkey is warmed, 1-2 minutes.
  6. Add salt or additional pepper to taste, serve and enjoy!
