What is Lingcod?

The lingcod, also known as the buffalo cod or cultus cod, is a fish of the greenling family Hexagrammidae. The mild-tasting meat of lingcod is tender yet firm, with large, soft, moist flakes. It provides around 18 grams of protein and only 1 gram of fat per raw 4-ounce serving, making lingcod an excellent source of lean protein. Lingcod works well on the grill, and large lingcod can be stuffed with vegetables and baked, and this fish lends itself well for an upscale fish and chips - a Pacific Northwest favorite.

Like most fish, Lingcod fillets should be cooked to an internal temperature of 145°F.

How to Cook Lingcod

  1. Oil fillet and season with your choice of herbs
  2. Add oil to pan and heat over medium-high
  3. Sear about 2-3 minutes per side
  4. Baste with juices
  5. Cook until internal temp reaches 145°F
  6. Rest for 5 minutes
  7. Slice, serve and enjoy!

Is lingcod good to eat?

Lingcod is very good eating. It's very comparable to halibut and cod - almost subtly balanced between the two. It's mild flavor lends itself well to a variety of recipes.

What does lingcod taste like?

Lingcod is a lean, white fish, with a mild flavor profile similar to halibut or cod. Its flesh holds a medium-firm texture with large flakes. The raw flesh can on occasion have a blue-green shimmer, but it will disappear wen cooked.

Is lingcod the same as cod?

Lingcod (Ophiodon elongatus) are not cod. They are a member of the greenling family, but like cod, are a white fish that has a buttery and mild flavor profile.
