Rib

Rib is the upper-back region, specifically the muscles connecting the 13 pairs of ribs along the backbone. These are low activity muscles, resulting in heavily marbled meat. The Rib is known for its tender quality and buttery flavor. We offer the Ribeye Steak as either a 16oz or 32oz cut, and seasonally the Prime Rib Roast.
